Heat oil in a wok or skillet over high heat. Give the stir fry sauce one more mix and pour it over the veggies in the pan. Stir in bean sprouts and cook 1 minute more. Heat remaining tablespoon of oil in the same pan and add onion, carrot, celery, and garlic. Remove from the pan and set aside in a bowl to keep warm. Toss the remaining vegetables into the wok. Heat 1 tablespoon oil over medium-high heat and cook chicken in batches until no pink remains.Mix the garlic and ginger into the other pan vegetables. Pour the last tsp of oil into the bare spot and add in the ginger and garlic, frying it for 20-30 seconds, stirring, until aromatic. Push the vegetables to the sides of the pan, making a bare spot in the middle.Add 2 Tbsp water and saute 2 more minutes. When water begins to boil, gradually add cornstarch and water. Add the broccoli florets and celery and saute 2 more minutes. While mixture cooks, in small dish combine sugar, pepper, soy sauce, oyster sauce and sesame oil. Saute carrots and broccoli stalks in the oil for 2 minutes. Once the chicken has cooked through, 3-5 minutes, remove it to the mushroom bowl. Put the vegetable oil in a large, wide skillet set over high heat. When the chicken is cool enough to handle, remove the meat, chop and set aside discard the skin and bones. Remove chicken from the water, and let cool. Cook, stirring occasionally, letting the chicken brown a little. In two cups of boiling water, simmer the chicken for 30 minutes. Add another tsp of oil and pour the chicken into the hot pan.Pour in 1 tsp oil, then immediately add the mushrooms.
